My Cellar  |
Cellar condition is the most important variable if you are hoping to enjoy wine to the peak of maturity. Burgundy and Champagne are the two styles which least tolerate bad storage conditions. Ideal is considered to be : Dark, 85% humidity and 10-14°C with no temperature fluctuations.
My own cellar is not bad, but can reach 20°C during the summer months, hence, most of my wine is professionally stored - this also has the advantage of saving good bottles from people who have already enjoyed enough !!!
